And FYI, we’re not talking about a bag of Skittles, we’re talking real, live, fresh produce brimming with vitamins, minerals and phytochemical power that quite literally can save your life. Whether you’re preventing or curing disease, trying to improve your performance or simply trying to lose a few pounds, few strategies are as wildly agreed upon in the medical community as the “eat the rainbow” philosophy.
In this post, we’ll address why this is … from both a general perspective and then into a very detailed explanations about why, when and how to enjoy eating the rainbow.
If eating fresh fruits and vegetables can positively impact your health in every aspect … AND it’s better for the planet, why is the CDC reporting that just 12.2% of American adults are meeting the standard for fruit consumption and only 9.3% are meeting the standard for vegetables? Well, truth be told, it’s not always that easy. Simply walking into the supermarket and filling a shopping cart with veggies doesn’t solve the problem. Unlike a bag of Doritos, you can just open a bag of spinach and expect a mouth-watering treat and bursting flavor.
Produce takes time, and most of all knowledge of when, why and how to eat for the rainbow magic to happen. There is an art to cooking that requires time, attention and love. It’s not rocket science, anybody can do it, and that is why we’re creating the Eat The Rainbow Directory.
This will be an evolving resource as we add posts to fill in the grid, but over the next few months, we’ll fill it up with every one of the perishable staples we cook in our kitchen. We’re going to give you the very simple 4-1-1 on why you want to eat each one (i.e. its predominant health benefits), when to eat it (i.e. when it’s in season) and how (we’ll give you one of our original or link to one of our favorite recipes). We won’t get too techy, but we hope to inspire you to rethink the way you eat, start counting colors instead of calories and adding color instead of cutting carbs.
